Tell the bartender a bottle you love, a mood you're in, or a drink you had once and never found again. They'll build from there. Wine, beer, and champagne are on hand for the less adventurous.

How to order

Three ways to start.

    Name a bottle

    The backbar leans bourbon and rye and runs deep — Pappy, E.H. Taylor, a cognac or two. Ask what's open tonight.

  2. 2

    Name a mood

    Bright and cold, dark and slow, something for a porch that isn't here. The bartender will take it from there.

  3. 3

    Name a memory

    A drink you had once in a city you can't remember and never found again. Describe it. They like the challenge.

The shelf
